How to make delicious corn chaff?

Corn chaff   is corn and beans that is slowly simmered together with onions, tomatoes, red oil, various spices and depending on preference; meat, smoked fish, cow skin(kanda) or meat adds an additional flavor to this dish.

Ingredients

•          One pound dried beans any variety

•          One pound corn (fresh or dried) boiled

•          A kilo of smoked fish, cow skin (kanda), meat; depending on your preference

•          2 medium tomatoes diced

•          1 1/2 teaspoons minced garlic

•          1 teaspoons grated ginger

•          ½ medium onion diced

•          ¼ cup crayfish smoked/dried shrimp optional

•          ½ - ¾ cup palm oil

•          Pepper (as desire)

•           Maggi (season) and Salt to taste

Instructions

1) Pick through the beans and discard any foreign object. Rinse beans and place in a bowl with water above it. Cover and let sit overnight or for 6 to 8 hours.

2) Drain the soaked beans, rinse, and place the beans in a Dutch oven or pressure cooker. Follow instructions for cooking beans in your pressure cooker. It takes roughly between 8 to 12 minutes to cook. If not using a pressure cooker, cook the beans for about 1 to 1½ hours until tender.

3) Drain the cooked beans and keep aside

4) Pick through the corn as well and discard any foreign object. Rinse corn and place in a Dutch oven or pressure cooker. Follow instructions for cooking beans in your pressure cooker. It takes roughly between 8 to 12 minutes to cook. If not using a pressure cooker, cook the beans for about 1 to 1½ hours until tender.

4) Combine the corn and bean in a pot. To it; add palm oil, onions, tomatoes, crayfish, smoked fish, garlic, ginger, smoked fish, salt, maggi and pepper.

5) Then pour about 4– 5 cups or more of water bring to a boil and let it simmer for all the flavors to come together for about 20 -25 minutes, stirring occasionally. Taste for seasonings and serve.
